I’ve not tried scaling this recipe up. In the past, where I’ve made lots of jollof and chicken I have made them separately. I suppose it depends on just how much you’re scaling it up by (because ideally you want the chicken to sit on top of the rice as in cooks in a single layer) and by extension, how wide your pot is! A whole lot of babble from me but I’m not sure it was actually helpful 😂
i ended up doubling the recipe but baked the chicken and rice separate. it’s delicious! my Ghanaian housemate was jokingly offended at first when i said i wasn’t using a Ghanaian recipe, but when she ate it she said it was perfection 🤣 thank you ❣️
I made this recipe today. Only chance was 1 scotch bonnet. But OMG. This is absolutely amazing and throughly delicious. Followed the final step under the grill. Wow.

I made this just yesterday and it is now firmly my favorite flavored-rice dish. Couldnt get enough of it and I wish I hadn't scaled the ingredients' amounts down (600g of rice seemed too much for two people)
My whole family and I absolutely adore your recipes so much. My husband is Togolese, so when you shared this Jollof recipe… I was very eager to try! Sadly, I did something wrong and it ended up in a mush. I think maybe it’s because I just bought long grain rice and tried to parboil it myself. So the 600g was measured before it was parboiled too. It ended up being enough for two full Dutch ovens. That said, the chicken tasted wonderful. The flavor and the aroma of the rice while it cooked was amazing as well. I’ll try again with Uncle Ben’s. Fingers crossed I can get it right next time! Thank you for sharing so many delicious and flavorful recipes!
Oh no, I'm so sorry to hear this! I think the issue is that most long grain rice that's sold in supermarket (at least here) is actually parboiled, which is why it cooks so quickly. So yes, you parboiling it yourself will have meant it would turn to mush. There's nothing worse than putting in the time to make jolly for that to happen - I'm so sorry!!! Hi! I really, reaaaally wouldn’t recommend chicken breast for this. They’ll be overcooked and incredibly dry
