So excited to try this! Would this be a good make ahead recipe? Hoping to try it for a dinner party next week 🤔

Yes, I should think so! You could either make it ahead of time and then gently reheat it just before serving (perhaps with an extra splash of chicken stock so it’s not too thick). Or you could prepare it up until just before adding the chicken: let the sauce cool and refrigerate, then before serving cook as instructed 😊

This recipe looks so good, can’t wait to make it tomorrow! Do you cut the chicken into slices or dices before poaching? Or will that impact the cooking time. It looks like it’s cut up in your photo but not sure in the recipe. Thank you!

What is “chilli oil”? And where do I find it?

At its most basic, chilli oil is quite literally chilli infused oil, but the one I'm referring to here is a Chinese-style chilli oil. There are lots of different types/brands and any will work. You should be able to find some in the world cuisine aisle of your supermarket

I like using boneless, skinless chicken thighs for this but you could absolutely use skin on (I just personally don’t like soggy chicken skin 😂)

Loved it!😄 I couldn’t find lime leaves either but was still delicious. I was nervous about poaching the chicken, it seemed like it was bubbling too much on the lowest heat, but it turned out really good.

They’re quite hard to substitute because the flavour is so unique, but you can use the zest of 1 lime - it won’t taste the same, but it’ll still be delicious! ☺️

Thank you!! Surprisingly enough, a lovely woman cut off a leaf from her tree for me at the market, just one though, so I’ll do one leaf and some lime zest to make up for it. I’ve made so many of your recipes and have yet to be disappointed!!!

Yes! I added a teaspoon but having retested it after filming, I didn't think it needed it (but if you'd like it a little sweeter, by all means go for it!)
